Bacon Wrapped Jalapenos

  • 20 large jalapeno peppers
  • 1 pound thick-sliced bacon
  • 1 pound Italian sausage, uncased
  • 8 ounces cream cheese, room temp
  • Toothpicks
  • Liquid smoke or chipotle sauce

  • Preheat the oven to 450F
  • Prep the jalapenos by cutting off the stems and splitting them in half lengthwise. Remove the membrane and seeds inside.
  • Roast jalapenos in the oven for 20min and let cool
  • Brown the sausage in a skillet over medium-high heat. 
  • Drain the excess oil and combine the sausage with the cream cheese, add liquid smoke to taste
  • Take two jalapeno halves, stuff them with this sausage-cream cheese filling, and then sandwich them together.
  • Wrap in bacon and secure with toothpicks.
  • Place the bacon wrapped jalapenos in the oven for about 15 minutes.
    Turn them once so that the bacon browns evenly.
